How to Make Belizean Chimole “Black Dinna”

Chimole or locally known as “Black Dinna” in Belize is a succulent and delicious black soup that is enjoyed by many Belizeans throughout the country. The soup is easy to make and the black recado that is used in the preparation gives the food its black color. Once you have tasted it, you will always crave it.

Chimole / Black Dinna

Ingredients:

1/4 cup black recado

1 chicken (cut into parts)

2 tablespoons cilantro ( chopped)

2 tomatoes (diced)

2 tablespoons malher ( chicken bouillon)

3 potatoes in cubes

3 to 4 fresh tomatoes

1/2 onion (sliced)

3 garlic cloves (mashed)

Salt and pepper

6 boiled eggs

Method:

Season the chicken with salt and pepper and brown in a hot pot with little oil. Once browned, add enough water to cover the chicken and then add the onions and garlic and potatoes, Cook, over low heat for 30 minutes. Dissolve the recado and the malher (chicken bouillon)and add it to the chicken. Add diced tomatoes and cilantro. Add more water if necessary. Season to taste with salt and pepper. Served hot with boiled eggs and corn tortillas.

Actun Tunichil Muknal Mayan Cave (ATM Cave)

While no one knows the original name of the cave, today it is called Actun Tunichil Muknal (ATM) Cave from a Maya term meaning “Cave of the Stone Sepulcher”. Sometimes referred to as the Cave of the Stone Altar, ATM is a complex underground network of tunnels that lead to one of the most important historic sites ever discovered. Containing over 1,400 artifacts from the end of the Ancient Maya Empire that have lain undisturbed for more than a millennium, the ATM cave was once used by priests to conduct human sacrifices at a time of drought, warfare, and civil strife.

The entrance to ATM Cave is protected by a deep pool of cool water that visitors must traverse by swimming. Once inside, the cave opens up to a series of enormous stalactites and stalagmites. The first indication of the cave’s religious importance is a large stone altar carved from a stalactite with a stingray spine as its centerpiece, the altar or sepulcher that gave the cave system its current name. All around the altar lie potsherds, bone fragments, relics and other artifacts left behind by the Maya priests more than a thousand years ago.

Further in, towards what the Ancient Maya believed was the sacred nexus where the underworld of the gods connected to the world of men, lie the bones of the Crystal Maiden. This sacrificial victim, estimated to be a young adult in their 20s, has, over time, bonded with the minerals in the cave to acquire a glittery sheen. Nearby lie the remains of seven adult sacrificial victims as well as those of five children all under the age of 5. Thousands of fragmented pots and vessels are scattered near the bones, including some largely-intact pots and bowls that archeologists believe once held food offerings to appease the gods. Other artifacts include the obsidian blades that are believed to have been used in the solemn but gruesome human sacrifices conducted by Maya priests.

Archeologists have estimated that the ATM cave first became a site used by the Maya for religious purposes nearly 2,000 years ago. The most recent remains are dated to the Terminal-Classic Period (roughly 800 to 1000 AD), a time when the Maya heartland was suffering from severe drought and civil wars. Forgotten for more than a thousand years, the ATM cave was rediscovered in 1989 by local archeologists.

Due to the fragile nature of the artifacts within, only guides authorized by the Department of Archeology can access the ATM Cave. Seven Ways to Get to and from Belize Airports and Placencia

Booking a Belize vacation is easy. Pick a resort. Find an airliner. Arrange in-country transport to get you where you want to go. But before you get to the fun stuff, you must get from Belize City to your accomodation. Putting that task in the hands of your resort staff can eliminate a lot of work and worry. For example, Chabil Mar luxury resort in Placencia gets guests to and from its grounds every day, so it just makes sense to let staff help you traverse the 160-mile distance between Belize’s airports and Chabil Mar. Whichever method of travel you prefer, they’re happy to help!

Take a shuttle
They’re popular for many reasons: cost is reasonable, there are two running shuttles that service the Belize City-to-Placencia route and the three hour drive and beautiful scenery will slow your heart rate so you’re ready to vacation in earnest the minute you stop off the shuttle bus.

Grab a second flight
You’re already at the airport, so if you’re in a rush to get to Placencia, five early morning or late afternoon flights to and from Belize International Airport or Belize Municipal Airport to Placencia take only about 40 minutes each on nine-to-13 seat Cessna airplanes. Plan to spend about $117 USD per one-way ticket.

Taxi, please
A Belize taxi can get you to and from the resort and airport expeditiously, and you can find one after you land, but you could pay more money than you would if you caught an in-country flight, so ask for pricing immediately. Here’s some good news: If you like to negotiate, this is the time to put your talent to work!

Van or private car
If you’re a celebrity, price is no object and you require door-to-door service from airport gate to your lodgings, a private car is likely your preference. On the other hand, hire a private van to get to Placencia. The typical fare for this ground transporataion is between $260 USD and $300 USD for one to four passengers. This is one case in which comparison shopping and/or additional people can translate to savings.

Car rentals
It makes sense to rent a car if you intend to cover a lot of ground during your Belize holiday. Vehicles await you at both Belize Airports and there are two car rental agencies in Placencia proper, but your car won’t come cheap: Average rentals per day run around $75 USD and don’t expect expansive choices when it comes to picking a vehicle.

Take the bus
Get the lay of the land, relax after your flight and pay just $15 USD each way to ride the bus to and from Placencia from your Belize City airport. The ride takes under five hours and if you miss a bus, you can always catch a second one or stay overnight in Belize City and see some sites before catching the early bus.
